Meat Tongg

The founder of Tongg was born as a son of African soil. He was first introduced to biltong by his student friends (who all grew up on cattle and sheep farms). His love for beef endures today and his hunger for artisanal air-dried meat is now much more than a craving. It’s a labor of love.

The story of biltong all started back in 1835, with the trek farmers from the Cape Colony in South Africa, who headed north in search of fresh pasturelands for their cattle. When these slow-moving settlers required the preservation of beef necessary for survival, they cured strips of beef with salt and then hung these to air dry in the sun.

And biltong was born.

Now living in Central California, he produces artisanal small batches of Tongg.

Using an air-drying process ensures that the meat retains much more of the natural proteins and nutrients. First marinated and then masterfully hand spiced, the slabs of steak are hung in a temperature-controlled environment where circulating fresh air flows across the meat to extract the moisture while embedding the spice flavor.

Tongg is never exposed to any high temperatures including fire or boiling, and is never processed in humid conditions.

WHATS THE DIFFERENCE BETWEEN TONGG AND DROËWORS?

Droëwors also originates from Southern Africa and is an air-dried sausage. The same USDA Beef used for Tongg is ground, seasoned and then stuffed into sheep casings and hung to air dry in the same way as Tongg.

Spices include salt, pepper, coriander, clove and nutmeg.

MUST TONGG BE REFRIGERATED?

No. Certainly not under a standard air temperature of 72 degrees Fahrenheit.

We do however recommend that you eat Tongg 2 to 3 days after opening (if you can last that long)! Keeping the bag sealed and refrigerated will help prevent the meat from drying excessively, and as time passes, ambient air will make the meat a little too tough to enjoy.

As a high-performance athlete, fitness fanatic or simply a health-conscious outdoor person, you’ll be glad to know that Tongg is a wonderful food source to help build your body as it has one of the highest protein contents.

Too fat or not to fat?

All about personal choice.

Tongg uses Premium USDA top and bottom round cuts (aka topside or silverside), as these are the tenderest cuts and contain just the right amount of marbling (which is the intramuscular fat content).

As a preference and option, some customers choose a thin slither of fat on the side of the meat. This produces a buttery and savory flavor and keeps the Tongg moist and juicy.

Others may prefer a leaner taste to their Tongg and will be adamant that fat (or gristle) is a big no-no. These customers are therefore able to order Tongg where the meat has been trimmed of fat or gristle before being cut into strips for air drying.

IS TONGG HEALTHY?

Yes and always.

Tongg is considered a high protein, low fat snack favored amongst high performance athletes, and those on special diets.

Tongg retains most of its protein content and contains
many vitamins and minerals, including iron, Vitamin B12, Vitamin E, zinc, and creatine.

There are many benefits to enjoying Tongg including weight loss, and enhanced performance (including improving type 2 diabetes or metabolic syndrome). Its Keto and Paleo friendly to help burn more fat effectively. Did we mention ZERO SUGAR.

Worth noting that although a healthy high in protein and low in carbohydrates snack, overindulgence may cause weight gain, high cholesterol and high blood pressure.

ARE TONGG AND JERKY THE SAME?

No and never.

Biltong is cured and air-dried whilst Jerky is seasoned, and cooked at temperature, giving it a dry, sweet-smoky taste.

Tongg is always beef taste first – the star of the show – followed by a distinctive marinade and spice, without trendy flavors to overpower your palette.

Tongg is made using vinegar, all-natural spices and contains
zero sugar. There is no heat involved in the air-drying curing process which takes way longer.

Tongg is a thicker and more flavorful meat with spicy and salt
taste elements.

How should Tongg be stored?

Tongg will only start forming mold when exposed to oxygen and heat. So as a rule, wrap your Tongg in a kraft paper bag and store it in the fridge. The kraft paper will allow excess moisture to continue leaving the meat, therefore discouraging mold growth. If your Tongg was ordered wet and goes a little darker, it’s the result of oxidization and should be fine to eat.
General rules:
• Keep Tongg in a dry, cool place and avoid direct sunlight and heat.
• Use kraft paper not plastic, keep it sealed.
• Shuffle moist Tongg in the bag.

In dryer climates Tongg should be kept in kraft paper bags in a cool dry place (like a kitchen closet).
In humid climates Tongg should be kept in kraft paper bags in a refrigerator for a few days.
For extended Storage Periods Tongg can be stored & frozen but preferably by vacuum sealing it within a plastic bag. Before eating, take the Tongg product out the freezer, wait 1-hour to thaw – and it will be ready to eat once at room temperature. Note that when you defrost Tongg, moisture is released so ensure there’s natural airflow.

WHAT’S THE TONGG SHIPPING AND RETURN POLICY?

We live to ship and typically, orders are processed and then shipped within 24 hours via either USPS or UPS, dependent on location. Whilst we can ship Monday through Friday, we prefer to ship as many orders as possible on Mondays or Tuesdays, to prevent Tongg from spending time over a weekend
in the middle of nowhere.

Most importantly, we absolutely want to know if you aren’t happy. If you aren’t satisfied with the Tongg product you ordered, please return it in its original packaging for a full refund within 48 hours of receipt from our facility. Returns will be administered as replacement of the same or different product of equal value.
